Yasaiya Mei translates to vegetable shop, and that is exactly what drives the menu at this restaurant on the 3rd floor of Omotesando Hills. The kitchen sources directly from farmers and specializes in vegetable shabu shabu using kombu dashi, bagna cauda, and dishes built around fermented foods. The shabu shabu format naturally accommodates different diets because each person can choose what goes into their pot. Additional locations in Gotanda, Yokohama, Kawasaki, Nagoya, and Osaka follow the same vegetable forward approach.
