Vegan Sushi Tokyo opened in June 2024 in Shibuya's Dogenzaka neighborhood as the city's first dedicated plant based sushi restaurant. The kitchen is supervised by Ko Tanimizu, a vegetable sushi chef with over 14 years of experience. Pieces are made in traditional nigiri and gunkan styles using inventive substitutions: pumpkin paste for sea urchin, tofu and yam for kabayaki, carrot for shrimp tempura. The menu avoids the five pungent roots (garlic, onion, chives, scallions, green onion), making it suitable for Buddhist and oriental vegan diners. The space has a retro modern interior with maneki neko figures, bar seating, and a few booths. The restaurant is operated by Vcook Inc., a vegan recipe platform.

Good to Know:

  • The simple set is ¥3,000 (¥3,300 with miso soup and pickles). The premium set is ¥5,000 and includes ten pieces, miso soup, pickles, three vegan sakes, and matcha ice cream.
  • Credit card only. No cash.
  • Open 11:00 AM to 4:00 PM (last order 3:15 PM). Closed Wednesday, Saturday, and Sunday. Lunch only.
  • Reservations recommended. Expect waits of up to two hours during peak times without one. Order via QR code.
  • Eight minute walk from Shibuya Station. Located on the second floor of the Nono Building.
  • A sister location operates in Kyoto.
