Udatsu Sushi is a Michelin starred omakase counter in Nakameguro where chef Udatsu has built a reputation for taking vegetarian sushi as seriously as the traditional fish based menu. The vegetarian course runs 18 items and features pieces like grilled matsutake mushroom, golden corn tempura with applewood smoke, and nigiri made from shiitake, aubergine, and okra using a specialized three vinegar rice. Produce comes from Kajiya Farms in Hiroshima, which supplies pesticide free herbs and edible flowers.
