Soranoiro NIPPON earned a Michelin Bib Gourmand and occupies a spot on Tokyo Ramen Street in the basement of Tokyo Station. Chef Chihiro Miyazaki developed the vegan ramen after a successful showing at Paris Ramen Week in 2014, building a vegetable based broth enriched with carrot puree and red pepper puree. A gluten free brown rice noodle option using Shimane Prefecture rice is also available. Traditional meat based ramen sits alongside the vegan options, making it a natural stop for groups with mixed dietary needs.
