Kyushu Jangara is a ramen chain that has been operating in Tokyo since the mid 1980s, specializing in Hakata style tonkotsu (pork bone broth) ramen from Fukuoka. The original shop is in Akihabara and there are branches in Ginza, Harajuku, Akasaka, and Ikebukuro. While the chain is not fully vegetarian, it offers dedicated vegan ramen at most locations, made without any animal products or MSG, with a plant based broth and soy meat chashu that gets blowtorched for char. - Five pungent root free preparation can be accommodated for Buddhist vegetarian or oriental vegan diners. Mention it when ordering.
