Kassaiya chimaki is a small, fully vegetable izakaya in Omori that has been open since 2013. The menu changes seasonally and is built entirely from plant based ingredients, with the kitchen applying a wide range of techniques (raw, pickled, grilled, fried, simmered) to domestic, seasonal vegetables. Signature items include a chunky veggie burger with homemade demiglace, a Japanese style gratin topped with grated yam and kombu instead of cheese, and vegetable tantan noodles made with more than ten types of vegetables in the dashi. Soy based mayonnaise replaces eggs in dishes like the potato salad. The space seats 20 in a Showa era neon street setting with a traditional wooden entrance.
