Ise Sueyoshi is a 10 seat counter kaiseki restaurant in Hiroo led by chef Yuuki Tanaka, who trained at the prestigious Kikunoi in Kyoto. The standard 10 course menu showcases ingredients from Mie Prefecture, but since 2016 the kitchen has offered full vegan kaiseki courses at no extra charge, replacing fish stock with a broth built from kombu, dried shiitake, and burdock root tea. The restaurant ranked number one in Japan and 12th globally on TripAdvisor's Best of the Best in 2024. All it takes is 10 days advance notice for the vegan menu.
