Chabuzen is a tiny, owner operated vegan ramen shop tucked into the residential backstreets of Setagaya, about a ten minute walk from Shimokitazawa Station. The full name is Food Therapy Diner Chabuzen, and the cooking is grounded in yakuzen, the Japanese practice of food as medicine. Owner Daiji Takada makes everything from scratch using organic, additive free ingredients. The menu is entirely vegan, halal certified, and focused on ramen and curry, with a handful of sides like gyoza and soy karaage. Takada originally ran the place as a non vegan organic shop before converting the menu fully to plant based after growing demand from international visitors.

Good to Know:

  • The Dragon Ramen is the signature. The broth is made from kombu dashi and fermented brown rice yeast, designed to mimic tonkotsu. Takada finishes it with his own mayu blend of olive oil, sesame oil, charred garlic, onion, and ginger.
  • Other ramen options include the Kuro (black sesame tantanmen), the Nirvana (curry ramen, named after the band), and a garlic variation. Vegan chashu slices can be added to any bowl.
  • Rice noodles are available as a gluten free swap.
  • Ramen runs around ¥1,200 to ¥1,500.
  • The restaurant seats about eight people, with a mix of counter spots and a small tatami area. It can feel cramped, especially the tatami if you're tall. Waits are common.
  • Takada often runs the kitchen solo, so service can be slow. The trade off is that everything is made to order.
  • Menu is available in English, Chinese, and Korean. Takada speaks some English. About 80% of the clientele is non Japanese.
